3 countries, 2 borders, 1 chicken bus sandwich...by Spot(dot)It

We traveled from Guatemala thru Belize to Mexico by bus.  It was very tiring because we had to walk each time there was a border and carry our bags.  It took all day - we left at 7 and got to our hotel at 8 at night.  We had tasty rice, beans and chicken for lunch at the dock in Belize City.

On the bus, we played games, drew pictures, listened to audio books, hummed songs and looked out the window.  On most of the buses, there was a potty which was something we hadn't seen before.  There was air conditioning to keep us cool.  Most importantly, I was happy that there weren't chickens on the bus with us.

I asked my Mom and Dad to try to arrange future bus travel without poultry.  I was happy to see this sign when we got on the bus in Guatemala City.


BUT...we had a tasty chicken sandwich on this adventure that I would like to make again.  I think I told my Dad about four times that it was a tasty sandwich!

Here's the recipe:

Chicken Bus Sandwich - Recipe by Spot(dot)It

1. Cook white chicken meat and shred
2. Slice a bun in half
3. Put a pickled jalapeno in the bun
4. Place shredded chicken in the bun
5. Put lettuce in the bun

(eat it on a bus, if possible...without clucking chickens!)
